Satay Chicken Skewers

Ingredients
- 500g chicken breast, cubed
- 1/4 cup Church Farm Rendang Curry Paste
- 1 tbsp tamari
- 2 tbsp coconut cream
- olive oil, for frying
- wooden skewers
Sauce:
- 2 tbsp crunchy peanut butter
- 2 tbsp coconut cream
- 1 tsp tamari
- 1-2 tsp coconut sugar
- 1 tsp curry paste
Serve with cucumber, tomatoes and fresh chilli.
Method:

Add diced chicken breast to a bowl along side curry paste tamari and coconut cream and mix well then set aside.
- Meanwhile mix together all sauce ingredients and set aside.
- Assemble chicken onto skewers - I did around three to four pieces per skewer.
- Heat up oil in a pan on medium heat and add in skewers cook for 5-6 minutes before flipping and cooking for another 5-6 minutes remove from pan and set aside.
- Serve with rice sliced cucumber, tomatoes fresh chilli and a dollop of the satay sauce!
