Satay Chicken Skewers

Ingredients

Sauce: 

  • 2 tbsp crunchy peanut butter
  • 2 tbsp coconut cream
  • 1 tsp tamari
  • 1-2 tsp coconut sugar
  • 1 tsp curry paste

Serve with cucumber, tomatoes and fresh chilli.

 

Method:

  1. Add diced chicken breast to a bowl along side curry paste tamari and coconut cream and mix well then set aside.
  2. Meanwhile mix together all sauce ingredients and set aside.
  3. Assemble chicken onto skewers - I did around three to four pieces per skewer.
  4. Heat up oil in a pan on medium heat and add in skewers cook for 5-6 minutes before flipping and cooking for another 5-6 minutes remove from pan and set aside.
  5. Serve with rice sliced cucumber, tomatoes fresh chilli and a dollop of the satay sauce!
