Honey Sriracha Chicken Brothy Rice

Ingredients

  • 2 big chicken thighs
  • 2 tbsp CF Sriracha
  • 2 tbsp tamari
  • 1 tbsp honey
  • 1/2 cup rice
  • 1 cup water

Broth

  • 1 cup water
  • 1 tbsp sriracha
  • 1 tbsp tamari
  • 1 tsp honey

 

Method:

  1. Add your rice and water to a rice cooker or sauce pan and set.
  2. Meanwhile, in a bowl, add chicken thighs, sriracha, tamari and honey and mix well. Set in the fridge to marinate for at least 30 mins.
  3. Once the chicken has marinated, place a pan on medium high heat and lightly spray with oil. Add in your chicken along side any left over marinate and cook for 10 minutes before flipping and cooking for another 7-8 minutes or until cooked through.
  4. Set aside to rest.
  5. In a sauce pot add in all broth ingredients and bring to the boil for around 5 minutes.
  6. Slice your chicken breast into strips and start to assemble your bowl! First add in your rice then top with your sliced chicken breast and lastly add in your broth! I topped mine with fresh chilli and coriander!
