Thai Yellow Beef Rib Curry
with our Thai Yellow Curry Paste
Ingredients
- 1800g beef ribs
- 1/2 jar Church Farm Thai Yellow Curry paste
- 400ml can coconut milk
- 2 potatoes, coarsely chopped
- Bunch of bok choy
- 2 tbsp fish sauce
- 2 tbsp lime juice
Method:
- Heat a large saucepan over high heat. Add some oil and brown the beef ribs on all sides in batches. Remove from the saucepan and lower the heat.
- Add the can of coconut milk and the yellow curry paste. Simmer for 10 minutes.
- Return the beef ribs to the saucepan, cover, and simmer gently for 1 1/2 hours.
- Add the chopped potatoes and cook for a further 20 minutes until they are tender.
- Then add the chopped bok choy and season to taste with fish sauce and lime juice.
- Serve with steamed jasmine rice.
