Honey Mustard Chicken Marylands with Apple and Fennel Salad

Ingredients
Marinade

  • 2 - 3 chicken marylands
  • 1 TBSP olive oil
  • 1 TBSP honey
  • Juice of half a lemon
  • 3 TBSP CF Honey & Pepperberry Mustard
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt

Salad: 

 

Method:

  1. Combine the marinade ingredients in a large bowl. Place your marylands in the bowl and mix until the chicken is thoroughly coated. Leave for an hour to marinate, or ideally overnight.
  2. Pre-heat your oven to 180 degrees. Heat a cast iron (or oven safe) pan over medium-high heat and sear the chicken on both sides. Reserve the leftover marinade for basting. Once your chicken is seared on both sides, place in the oven for 40 minutes, basting every 10 to 15 minutes with the leftover marinade.
  3. Combine the salad ingredients in a large bowl and mix well.
  4. Enjoy!
